CARROT CAKE
Mix together, then set aside:
2 c flour
1 ½ tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
2 c sugar
Blend:
1-½ c oil
4 eggs
½ c chopped walnuts or pecans
2 c grated carrots
1 c crushed pineapple (drained)
Combine with dry ingredients and bake at 350 F for 1 hour in a 13x9 pan.
Frost with 3 oz cream cheese, 2 tbsp canned milk, ½ c soft butter,
4 c powdered sugar, 1 tbsp lemon juice, 2 tsp lemon peel and 1 tsp vanilla blended well. |
